VINIFICATION AND REFINING
“Il Rosso” is a wine that has always been produced in Montepulciano, even though it obtained the DOC only in 1988. This wine is produced with the same grapes as Vino Nobile but its main characteristic is its youth. Medium maceration on the marc with intense initial gradual pumping over, brief static quiescence in the final phase, controlled temperature at maximum 28°c.
Aged for 3 months in large Slavonian oak barrels.
Aged in bottle for at least 4 months.
