VINIFICATION: Manual harvest in mid-September. VINIFICATION: After gentle pressing, the wines are fermented and then aged in oak barrels for 12-14 months in the 15th-century Bastion, with a moderate percentage of new barriques.

AROMA: The complex and elegant bouquet reveals aromas of white-fleshed fruit that captivate the nose before fading into notes of beeswax and vanilla.
