VINIFICATION
After destemming, the grapes are pressed without being crushed. From the
draining of the berries, we obtain the free-run must. The must remains in contact
with the skins for about two hours, enriching itself with color and complexity. The first
fermentation takes place in temperature-controlled steel tanks; this is followed
by approximately 9 months of aging in steel and finally bottling. The second
fermentation in the bottle is followed by at least 36 months on the lees. The riddling
is done manually.
TIRAGE: approximately 9 months after harvest
AGEING ON THE YEASTS: at least 36 months
DOSAGE AT DISGUSTING: zero
TASTING NOTES
COLOR: onion skin pink
AROMA: hints of wild strawberry, rose hip, and pink citrus
TASTE: fresh and harmonious, with notes of cherry, peach, and a light savory finish. The
perlage is fine, elegant, and persistent.
