Vinification
After hand-selecting the grapes, paying particular attention to both ripeness and quality, the bunches are laid out on racks in the attic. Here, free air circulation helps dry the bunches, protecting them from fungal attack. When the sugar concentration reaches the right level (after about 3 months), the bunches are destemmed and pressed. The resulting must is transferred to 55- and 110-liter barrels, which are immediately sealed.
Aging
Over 8 years in 55- to 110-liter chestnut barrels, then bottled.

Descriptive notes
After years of aging, this "nectar" presents intense aromas of apricot, dried fruit, walnuts, and honey. On the palate, it is rich, with a balanced sweetness and a smooth, persistent finish. The well-integrated acidity enhances its freshness and complexity. Pairings: dry pastries, chocolate cakes. It is surprising when paired with blue cheeses, but is also excellent on its own.
