PRODUCT INFORMATION
Pomino Vin Santo 2018
Pomino Vinsanto DOC
Pomino Vinsanto perfectly embodies Tuscan tradition. The combination of Pomino's terroir, its typical varietals, and its
historic production process give rise to unique sensations: sweetness and freshness are perfectly balanced
. The prolonged drying process and lengthy maturation in wood yield an intense and complex meditation wine,
with an intriguing and varied bouquet.
Weather Report
The spring season at Castello Pomino was rainy: in the months of March, April, and May alone, approximately
420 mm of rainfall was recorded, more than double the same period the previous year. Bud break of the vines
concluded in the second week of April, in line with Pomino's average, while flowering was recorded slightly
earlier than expected. Veraison of the grapes began in the second half of July and concluded
gradually in the first ten days of August. The alternating sunshine and light summer rains allowed the grapes to reach
excellent ripeness. The temperature range during the harvest certainly helped develop the aromatic, fruity, and floral complexity, while also maintaining freshness.
Technical Notes
Varieties: Trebbiano, Malvasia Bianca Toscana, and San Colombano
Alcohol Content: 14.5%
Aging: 7 years in small wooden containers
Tasting Notes
Pomino Vinsanto 2018 presents itself with brilliant amber hues and golden highlights. The bouquet ranges from notes of ripe
and dried fruit such as apricot to notes of candied fruit, then moving on to walnut and hazelnut. The spiciness
reminiscent of nutmeg and star anise is splendid. The finish reveals toasted notes reminiscent of coffee beans. On the
palate, it reveals a perfectly balanced acidity with a sweet component. The finish is extremely long; The palate is
clean and dry.
Pairing: A meditation wine, it pairs perfectly with a variety of desserts, from dry pastries to soft creams and
puddings. It pairs well with savory dishes such as foie gras, aged cheeses, and flavorful blue cheeses.
