A pale ruby ??color with elegant golden highlights, Vin Santo Occhio di Pernice reveals a vast and complex aromatic bouquet on the nose, with hints of dried fruit, honey, and a variety of spices. It is a precious and distinctive product, the fruit of the finest grapes and soils, south-facing and hand-selected to ensure its characteristic warm, enveloping flavor and a persistent finish. Natural drying on mats for four months and a very slow fermentation that follows the seasonal cycle, pausing in winter and restarting with the warmth of spring, ensure the characteristic structure and aroma of a great wine.
Vineyards: Located on the estate's best hillsides, south-facing, average age 30-35 years.
Blend: Sangiovese and other red grape varieties specified in the production regulations.
Harvest: Hand-selected around mid-September.
