The quality-selected grapes come from the highest part of the Ripa vineyard, composed of “Delle Querce” and “Il Poggio” land parcels. In these area the soil and the microclimate ensures richness and concentration to the grapes.

Vinifcation
Afer the quality-selected clusters are de-stemmed and pressed, the must is fermented and macerated in truncated-cone stainless steel vats for
15-20 days at temperature controlled, with integrated punch-downs and daily pump-overs
