Classification UmbriaIGT Vintage 2024 Climate The 2024 vintage was characterized by a relatively mild winter with normal rainfall, followed by a moderately rainy spring that ensured a good water balance in the soil. The spring temperatures, slightly lower than average, led to regular budding and uniform growth of the plants. The flowering of Sauvignon Blanc and Sémillon occurred in the first days of June, followed by fruit set about a week later, in line with the timing of recent years. During the months of July and August, the warm and stable climate, accompanied by significant temperature variations between day and night, favored a gradual and optimal ripening of the grapes. The harvest began with Sauvignon Blanc in the third tenday of August and ended with Sémillon around the middle of September. At the time of harvest, the grapes were in excellent health, perfectly ripe, with a good balance between acidity, sugars and a particularly rich and complex aromatic profile. www.antinori.it Winding The bunches, harvested by hand, were immediately transferred to the cellar and cooled before pressing in order to preserve the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 °C to allow natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature not exceeding 16 °C. Once this operation was completed, the wine was stored at a temperature of approximately 10 °C to prevent malolactic fermentation and to preserve the organoleptic characteristics unaltered. The two varieties were then joined so that one could “complement” the other. Fresh, vertical, slightly aromatic the Sauvignon Blanc, soft and tropical the Sémillon.
