AMBRIS Ambris is our floating gold, born from an incredible story of sperm whale ambergris fossils found on our estate. It reflects the history of our land, the people it represents, and the method used to create it. Produced in limited quantities.
Grape Variety 100% Sauvignon Blanc
Alcohol 13.5%
Vinification and Aging Hand-harvested. Temperature-controlled fermentation at 15°C for approximately 18-20 days. Part of the wine is vinified and aged in amphorae (six months on the skins), part in stainless steel, and part in barriques. Aged for another four months in the bottle.
Aroma and Flavor This complex wine has a depth of flavor that ranges from honey and mint, to citrus and hazelnut. Aging in different vessels lends consistency and concentration combined with freshness and elegance.
Certified organic vineyards with southern exposure at 490–530 meters above sea level and eastern exposure at 550 meters above sea level. Soil: ocean floor, consisting of sedimentary clay, gravelly sand, and alluvial silt with marine fossils (shells and oysters). Density approx. 5,000 vines/ha. Yield 35hl/ha. Guyot training system.
