Tasting notes A deep ruby ??red Pinot Noir that seduces the nose with complex aromas of dark berries, fine spices and a hint of subtle wood. On the palate it shows impressive finesse: the fresh acidity and delicate tannins combine to create an elegant and silky structure that gives balance to the wine. Winemaking Fermentation takes place in steel (stainless) tanks at a controlled temperature, deliberately avoiding the traditional «pigeage», or manual or mechanical immersion of the cap of marc. Instead, only gentle pumping processes are performed to keep extraction as low as possible. Malolactic fermentation takes place in concrete tanks before the wine is transferred to French oak barriques. The wine then ages for twelve months in second and third barrels, before being assembled in a large concrete tank and stored for a further six months to harmonize its structure and aromas.
