The nose reveals a multifaceted bouquet, characterized by lively citrus notes and a hint of green herbs. On the palate the wine releases all its lively freshness and a pronounced acidity that underlines its clear structure. The aging on the fine lees gives it an elegant and complex structure, while the subtle influence of the wood adds subtle and spicy nuances. The finish is long and mineral, an expression of the high altitude at which the vineyard thrives. The grapes are carefully hand-picked in mid-September. The subsequent fermentation lasts around two weeks to maintain the freshness and clarity of the wine. The wine then ages for six months on the fine lees in 20-hectoliter concrete tanks, with regular stirring to deepen its structure and complexity. A small part of the wine is aged in French barriques to give it further depth and delicate nuances. After blending, the wine is gently clarified, filtered and bottled.
