Climate
The 2025 vintage began with a mild and moderately rainy winter,
which allowed the formation and accumulation of good water reserves in the
soil. The growing season was generally dry, both in
spring, characterized by normal temperatures, and during the summer,
marked by a generally warm climate with good temperature ranges
between day and night. The ventilation provided by breezes from the
Adriatic Sea helped preserve the aromas and freshness of the grapes.
Careful soil cultivation and careful canopy management,
keeping the bunches airy without exposing them excessively to
sunlight, favored an optimal vegetative-productive balance during
the summer.
The grapes for Calafuria were harvested between the end of
August and September 18th, in line with the average of recent years.
Vinification and Aging
Immediately after harvest, the grapes were destemmed and gently
pressed. The resulting must was transferred to stainless steel tanks at a
temperature of 12°C to achieve natural clarification; here,
alcoholic fermentation took place, conducted at a temperature of
16°C, to preserve and enhance the aromatic component. Calafuria was
aged briefly in stainless steel in contact with its own yeasts before
bottling and subsequent release to the market.

Historical Data
Masseria Maìme is located in one of the most beautiful areas of Alto Salento, not
far from the town of San Pietro Vernotico – Brindisi. The estate
spans along the coast, creating a unique landscape of vineyards that grow
among woods and pine forests and stretch as far as the eye can see, blending
with the sea. The most common varieties are: Negroamaro, Primitivo, Syrah, Cabernet, and Chardonnay.
Calafuria comes from vineyards that extend along the Adriatic coast. It owes its name to one of over 700
bays in Puglia. The region boasts a long tradition of producing rosé wines made from
Negroamaro, a grape variety that best expresses its potential near the sea. A delicate rosé,
pleasantly fruity, savory, and ample, capable of expressing the aromas and colors of the
production area, Salento.
Tasting Notes
Calafuria 2025 has a delicate peach blossom color.
On the nose, it offers fruity and citrus notes of pink grapefruit, lychee, and nectarine, accompanied by pleasant
floral hints of jasmine. On the palate, it is pleasantly fresh, characterized by good aromatic persistence
and a delicate flavor.
