Vinification
The grapes are hand-harvested in September. After
destemming, soft pressing, and brief cold maceration,
fermentation takes place in steel tanks at a controlled
temperature for approximately 21 days.
Aging
In steel tanks for approximately 6 months and in bottle for 3 months.
Aromas
Refined and elegant. Clear notes of acacia, pear, and peach with
hints of tropical fruit.
Palate
Soft and persistent. The flavor is fresh and balanced with a
savoury finish.
Pairings
Ideal with seafood, fried red mullet, or vegetable soup
(Serving temperature: 10-12°C).
