The Cinta Senese is one of Italy's native pig breeds, distinguished by the characteristic white band (hence its name) that encircles its forelimbs. Only a few animals remain in Italy (about 4,000), and only those raised in Tuscany according to strict regulations (which require them to be released into the woods, where they graze on whatever they find) provide meat that can be defined as "Cinta Senese DOP."

From this high-quality product (derived exclusively from animals raised on company land), other excellent ingredients (fresh vegetables, tomato pulp and paste, extra virgin olive oil, wine), and without the use of preservatives, Il Poggio creates an exquisite ragù, following a traditional recipe that requires slow cooking and yields a delicacy with an utterly home-made flavor.
