Vinification and aging: After careful selection of the grapes, the grapes are destemmed, lightly pressed, and fermented in steel vats. Fermentation is carried out with selected yeasts for approximately 12 days. This is followed by maceration for 10 days. Pumping over and delestage are performed. Malolactic fermentation is then carried out in stainless steel. The wine is then aged for 2 years in second- and third-use French oak barrels. It is then aged in the bottle for at least 12 months.
