Vinification and aging The Morellino di Scansano grapes are harvested in early September for the Ciliegiolo, late September for the Sangiovese and early October for the Alicante. After a soft pressing and destemming, maceration takes place for 15 days followed by alcoholic fermentation at 24°C in steel. The wine undergoes an aging of 8 months, mostly in steel, while for a small part in second passage barriques.
