Grapes were hand-picked and destemmed between September 23 and 24, 2021.
Vinification | Aging
After harvesting, the grapes are macerated for approximately 14 hours at a temperature of 10°-12°C in special containers, protected from oxygen by innovative systems that recycle their fermentation carbon dioxide, reducing the presence of antioxidants. The must ferments and ages on the lees for 5 months, partly in large 20-27 HL wooden barrels and partly in steel tanks.
Bottling
The wine is then blended and bottled during the full moons between March and June 2022.

The bouquet, characterized by the scent of wildflowers, is pleasant and delicate. On the nose, the typical notes of Golden Delicious apples and Kaiser pears blend with citrus notes.

Great freshness typical of the grape variety and an almost salty flavor that goes hand in hand with a light minerality. The citrus notes return and finish, along with an elegant acidity.
Pair with
Delicate seafood appetizers, tuna sandwiches, zucchini cream soup, butter and salmon crostini, or sautéed grilled chicken salad.
