PRODUCT INFORMATION

Fleur de l'Europe is a Champagne produced in the municipality of Courteron by the Fleury winery. We are in the Aube department, to be precise in the Côte des Bar, a region that represents the southernmost part of Champagne. Here the brothers Jean-Sebastien, Benoît and Morgane Fleury manage fifteen hectares of vineyard according to the dictates of biodynamics, introduced into the company by their father Jean-Pierre at the end of the 1980s. The vineyards are treated exclusively with sulphur, copper and vegetable preparations, and most of the operations are carried out by hand. Compared to the northern areas of Champagne, characterized by calcareous soils with an abundant presence of chalk, in the Côte des Bar the vineyards insist on predominantly clayey soils. This is reflected in the wines, which on average are more structured than those produced further north. Fleur de l'Europe is a Brut Nature Champagne obtained from the vinification of Pinot Noir (85%) and Chardonnay (15%) grapes. Once harvested, the bunches reach the cellar, where they are subjected to soft pressing. The liquid ferments spontaneously in enamelled steel vats and oak barrels; then, after aging for a few months in the same containers, it is added with the liqueur de tirage and bottled. The rest on the yeasts for 72 months and the absence of dosage at the time of disgorgement make this Champagne complex but also sharp, evolved but decidedly nervous. Fleur de l'Europe appears in the glass with a bewitching golden yellow color. The aromas are reminiscent of citrus fruits and white flowers, but also of saltiness and acacia honey. The taste is lively, elegant, with a very subtle perlage and a sparkling acidity that refreshes the sip and makes the persistence rather long. Perfect as an aperitif, Fleur de l'Europe also lends itself to pairings with raw fish and seafood dishes.
