The quality of the grapes to be used for the Riserva typology, produced only in the best years, is initially determined with rigorous manual selection in the Pianrosso vineyards, followed by a long maceration on the marc and a prolonged refinement in barrels and bottles. Vineyards: 11.69 hectares boast the "Pianrosso" designation, located in medium-textured and galestro soils of Eocene origin between 240 and 360 meters above sea level, where the best grapes are chosen. Grape variety: 100% Sangiovese Vinification, fermentation and refinement: In stainless steel containers and vitrified cement tanks at a controlled temperature using cooling jackets and immersion plates. Aging: In oak barrels for a long period, followed by further refinement in the bottle. Color: Ruby red tending towards garnet. Organoleptic Characteristics: Intense, wide and complex aromas. Fruity, spicy, sometimes ethereal: the notes of ripe red berries harmonize pleasantly with multiple spices; the taste is warm, harmonious with pronounced but soft tannins; a full-bodied wine with a long gustatory-olfactory persistence that will evolve further with long aging in the bottle. Service: Uncork one hour before pouring and serve at 18°C ??in a "balloon" shaped crystal glass. The bottles should be stored in the dark, laid out in a cool place and without sudden changes in temperature. Food pairing: Suitable to mainly accompany structured second courses of juiced meats, roast game and furred game. Appropriate with very mature cheeses or tasted only as a meditation wine. Technical notes: The bottles are protected thanks to an anti-counterfeiting hologram on the capsule.
