Grande Cuvée "Beyond the Clouds" 2021
South Tyrolean White DOC
The new millennium began with the creation of a new "Supercuvée", the result of a careful selection of
best bunches at the harvest, exaltation and crowning index of Elena Walch's range of wines.
Thus, with the year 2000, we have the production of the first white "Supercuvée" of South Tyrol, award-winning
and inserted today in the restricted "circle" of the best Italian white wines: a choice of the highest quality grapes
qualities distributed over different grape varieties, together with a purely ed fermentation and maturation
exclusively in wood. The different levels of maturity of the vines used in the blend and the particular attention
transmitted during all stages of winemaking are strongly reflected in the preponderant character and
dominant of the Cuvée. In fact, it is said that the wine expresses the best of each vintage from Elena Walch's vineyards
"beyond the clouds", year after year.
From the intense bright yellow the cuvée "Beyond the Clouds" reveals itself in all its complexity already on the nose, where
ranges from the complex aromatic nuances of exotic fruit such as pineapple, to the floral notes of rose petals,
up to hints of toasted notes. Complex and refined, it strikes the palate with its full-bodied, creamy structure
softness and fresh sapidity, accompanied in the long and persistent finish by elegant and soft hints of barricades.
HARVEST 2021
We are delighted with a qualitatively excellent vintage, especially for our white wines!
A dry and cool spring led to a late flowering of the vines and was followed
from a hot and dry June. After a changeable midsummer, a surprising one followed
weather change in mid-August, which brought dream weather to the end
of September and the best conditions for optimal ripening of the grapes. There
harvest began in mid-September, about 10 days after last year. With skies
blue and lots of sun, and therefore daytime temperatures of midsummer and already autumnal nights, le
grapes were in a position to reach ideal sugar levels while maintaining acidity
very good. As a result, the 2021 wines are showing great quality!
VINIFICATION
Chardonnay is the master in this blend. The date of the harvest of the different grapes
from our two "single vineyards", the percentage of which may vary slightly
from year to year, is determined by the optimal maturation of the
Chardonnays. Being a blend, the harvesting and processing of all the grapes takes place
together and on the same day. After fermentation, a weekly run is carried out
“batonnage” for 3 months. The wine matures in French barriques for about 10 months and continues
a further refinement in the bottle for at least 6 months.
