Cervaro della Sala
In honor of the Monaldeschi della Cervara
The name celebrates the Monaldeschi della Cervara, the historic family that owned Castello della Sala in the 16th century.
The Barrique
Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and ageing in barrique.
From an Idea
Cervaro della Sala was born from the desire to create a white wine capable of withstanding long aging.
From a Winemaker
In 1985, Renzo Cotarella, then winemaker at Castello della Sala, produced the first vintage of Cervaro della Sala.

Castello della Sala is located in Umbria, not far from the border with Tuscany, about 18 kilometers from the historic city of Orvieto.
The lands of the Castello, an imposing medieval manor, extend over 600 hectares, 229 of which are planted with vineyards, at an altitude of 220-470 meters above sea level, amid the rolling hills that characterize the beautiful countryside of these areas.
The soil is predominantly clayey and calcareous, rich in fossil shells, with vineyards well exposed to the rising sun and excellent temperature ranges: Castello della Sala is a highly suited area for the production of white wines.
One exception: Pinot Noir, which finds ideal conditions in this terroir to express its full potential.
