PRODUCT INFORMATION

Cervaro della Sala
In honor of the Monaldeschi della Cervara
The name celebrates the Monaldeschi della Cervara, a historic family that owned Castello della Sala in the 16th century.

The Barrique
Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and ageing in barrique.

From an idea
Cervaro della Sala was born from the desire to create a white wine capable of withstanding long ageing.

From a winemaker
In 1985, Renzo Cotarella, then winemaker at Castello della Sala, produced the first vintage of Cervaro della Sala.

Castello della Sala
Castello della Sala
Castello della Sala is located in Umbria, a short distance from the border with Tuscany, about 18 kilometers from the historic city of Orvieto.

The lands of the Castle, an imposing medieval manor, extend for 600 hectares, of which 229 hectares are planted with vineyards, at an altitude of 220 - 470 meters above sea level, among the gentle hills that characterize the beautiful countryside of these areas.

The soil is mainly clayey, calcareous, rich in fossil shells, with vineyards well exposed to the rising sun and with excellent temperature ranges: that of the Castello della Sala is an area highly suited to the production of white wines.
Only one exception: Pinot Noir, finds in this terroir the ideal conditions to express itself at its best.

Soil
Soil
Of Pliocene origin, rich in marine fossils with some clay infiltrations.
