GRAPE VARIETIES: 100% Sangiovese.
TERROIR: vertical fissurabile shale with mix of clay on the first 30cm. on surface of 2,4 Ha
VITICULTURE: vineyard with 7800 vines per hectare, trained in Alberate, organically managed following the biodynamic principles.
HARVEST: grape harvest is done completely by hand, passing through the vineyard rows multiple times until the clusters have reached the perfect maturity. After a meticulous manual selection follows an optical selection of each single grape.
VINIFICATION AND MATURATION:
Attentive spontaneous fermentation in French oak vats a temperature between 27 – 30° C. Vinified as a single CRU in an expressly studied barrel of 110 q.li. Contact on the skins of about 32 days.
The spontaneous malolactic fermentation occurred in French oak barriques of 225 – 228 lt. and in tonneaux of 600lt. of first and second passage for 18 - 20 months. Ageing in bottles for minimum 12 months.
ALCOHOL: 15 % vol.
