IGT Toscana Cabernet Franc “Iugero” Grapes: 100% Cabernet Franc PROCESS The grapes are harvested by hand, using small crates, with an initial selection of the finest bunches from the vineyard. In the cellar, the bunches are destemmed and passed through a vibrating sorting table where they undergo further manual selection to maximize the quality of the grapes used. Alcoholic fermentation takes place in barriques placed horizontally on rotating monoblocs. This ensures the pomace is constantly immersed in the liquid throughout the fermentation process. Daily manual rotations ensure optimal homogenization of the wine. After alcoholic fermentation, the wine remains in maceration on the skins. At the end of maceration and after racking, the wine undergoes malolactic fermentation in the same barriques in which it was fermented. After this process, the wine enters the maturation phase in barriques until bottling. Once packaged, it undergoes further aging in the bottle.
