VINIFICATION In stainless steel at a controlled temperature. Controlled
maceration, post-fermentation on the skins for approximately 7/10
days.
AGING 12 months of aging in French oak barriques,
second and third passage for the Sangiovese; first and
second passage for the Cabernet Sauvignon and Merlot.
BOTTLE SIZES: 0.375 L / 0.750 L / 1.5 L / 3 L / 5 L / 12 L / 18 L
PACKAGING: Cases of 12 (0.375 L) and 6 (0.750 L) bottles, single
packaging for other sizes.
HARVEST: 2021 was characterized by budbreak at the usual
time, followed by particularly cold days with
temperatures sometimes below freezing, which
caused cold damage in the valley floors and on the
earliest varieties. Spring and summer proceeded normally
without any particular heat spikes. The low production
allowed the vines to cope with the
lack of rainfall without problems. The staggered ripening of the grapes
gave us an exceptional harvest with technological and phenolic ripeness worthy of great vintages.

APPEARANCE: Intense ruby ??red.

NON-SENSATION
Its aromas evoke aromas of cherry and plum
integrated with notes of licorice, bell pepper, and spices.

TASTING
On the palate, it is ample, persistent, and balanced thanks to a
persuasive tannic structure well integrated into its structure. An
iconic wine with a long finish and considerable aging potential.
PAIRINGS: Braised meats, stewed meats, and game.
