GRAPE VARIETY: Obtained from pure Sangiovese grapes.
CULTIVATION: The land on which the vineyards are cultivated is mainly made up of wide-textured marl and is located at an altitude between 300 and 450 meters above sea level, with exposure to the West / South-West. The production area is that of Castello di Montepò in Scansano in the province of Grosseto.
HARVEST: The harvest, strictly by hand, is carried out at the end of September.
AGING: Aging takes place for 14 months in barriques made of untoasted wood from the Tronçais forests.
PAIRING: Sassoalloro Jacopo Biondi Santi is recommended to accompany roasted red meat dishes. Incredibly excellent also in combination with baked rock fish.
