This wine was born as a challenge: to produce in Cortona, using our Syrah grapes, a great “white” wine… or rather a rosé, a Syrah that is enjoyable especially in spring and summer, to drink to accompany soups and fish and vegetable dishes, fresh, aged and blue cheeses, grilled meats or even pizza.
Maybe, after some tests… we really succeeded!
The Rosa del Castagno is made only with Syrah grapes grown in our vineyards, all protected by very low yields per hectare (maximum 40 quintals from 5,000 plants), rigorously selected specifically for this wine, in particular before and during the harvest (which usually takes place at the beginning of September, that is, slightly earlier than the start of the harvest of the grapes used to produce our red wines, “Castagnino” and Il Castagno), harvested exclusively by hand in small perforated 15-kilogram crates.
We then carry out a real “white” vinification: after an extremely soft crushing and destemming (which leaves the grapes perfectly intact), the grapes are immediately pressed in an equally delicate manner, then only the free-run must is transferred to steel tanks where it ferments at low temperatures (from 16° to 12°), for about 15 days, without having any further contact with the skins.
After a short maturation on the noble lees, and a period of natural stabilization and clarification in the cellar, the wine is bottled after sterile filtration.
Its particular, fascinating pale pink color with amber reflections, and its fresh, floral and fruity fragrance, are the natural result of these simple, ethical and eco-friendly cultivation operations and winemaking practices, in the name of the best “technological craftsmanship”.
