White wines typically play a minor role in Tuscany. We are all the more proud of our *Il Bianco*, which improves with every passing year.

Made from 100% Sauvignon Blanc grown in Castellina, the grapes are harvested exclusively in the early morning hours to ensure they arrive at the cellar cool. We allow for spontaneous fermentation following a twelve-hour period of skin contact with the must at 16°C.

By preventing malolactic fermentation, we achieve a wonderfully fresh wine; a five-month aging period on the lees—one-third in barriques and two-thirds in steel tanks—further provides it with excellent structure. *Il Bianco* is characterized by initial aromas of gooseberry and grapefruit, with floral notes emerging on the finish.
Ideal pairings include shellfish and fish, mushroom or seafood risottos, pasta dishes, and finger food. Our personal favorite: served with homemade ricotta-filled ravioli.
