The Chardonnay is harvested in mid-September and the Trebbiano in early October, ensuring the ideal timing for each variety. The grapes are gently pressed, using only the free-run must to produce the final wine, ensuring purity and quality.
Vinification takes place in stainless steel tanks at a controlled temperature between 16 and 18°C, preserving the fresh and delicate aromas of both grapes. After fermentation, the Chardonnay and Trebbiano are blended and aged briefly in stainless steel for approximately 3-4 months. During this phase, frequent batonnage enriches the wine with structure and complexity.
Nose: Citrus and green apple, with a lovely floral edge of jasmine
PALATEL: On the palate, the richness of the Chardonnay finds a perfect complement with the acidity of the Trebbiano. This gives the wine both good volume and great freshness.
PAIRINGS Perfect as an aperitif, it pairs well with first and second courses of fish, vegetables, and delicate cheeses.
