The wine "Giudizio" by Scipio, a white IGT Toscana, is a blend of native Tuscan grapes. The blend includes Procanico, Malvasia, Verdello, Ansonica and other native vines. The vines from which these grapes come are between 40 and 100 years old, some of which are ungrafted. The vinification takes place with spontaneous fermentation and aging in steel.
Made with direct pressing of grapes treated only with copper and sulfur, spontaneous fermentation and aging in steel, this white with a deep golden color offers a vast, iridescent and delicate olfactory range, which alternates scents of acacia flowers, stone and pebbles, a hint of steel, hints of honey, hay and wild herbs, remaining capable of maintaining a balance on a sober elegance. The music does not change in the mouth, where cleanliness and composure indulge an unusual, changeable palate, sometimes mellow, sometimes gentle, never elusive, long but without boredom, lively but without banality.
