The distinctive features of our sauces and pâtés are the premium meats and traditional recipes. The sauces, for example, are prepared with a cooking liquid of chopped fresh vegetables—onion, celery, carrot, etc.—when the vegetables are well-wilted. The meat is added for the first cooking. The minced meats are then cooked very slowly with the addition of wine, tomatoes from our garden, and other ingredients. The long cooking times and the consistency of the sauce are the best guarantee of a strong yet balanced flavor and absolutely homemade quality.
