Produced using the RIPASSO technique, deliberately applied more restrictively than the production regulations, it is obtained by passing the Valpolicella Classico over the Amarone pomace only once. The result is an authentic local wine that elegantly displays a beautiful complexity of fruity aromas and spicy notes, well-supported by good acidity and a balanced alcohol content.

Vineyards Owned by the Speri winery, located in the heart of the Valpolicella Classica area between 120 and 350 meters above sea level, specifically in the municipalities of San Pietro in Cariano, Fumane, and Negrar.
Grape Varieties Corvina Veronese 70%, Rondinella 20%, Molinara and other native varieties 10%.
Winery After manual harvesting, the grapes are immediately pressed and subsequently macerated at a controlled temperature. In early March, the Valpolicella Classico is re-fermented on the Amarone pomace only once.
Aging 12 months in 20 hl Slavonian oak barrels. Aged in bottle for 6 months.
Alcohol content 13.5% vol.
Sensory characteristics Intense red color with hints of red fruit, spices, and cocoa. Warm and smooth on the palate, well-balanced by rounded tannins.
Food pairing A very versatile wine, ideal with meat dishes and cheeses.
