The distinctive features of our sauces and pâtés are the premium meats and traditional recipes. For example, our sauces are prepared with a cooking liquid of chopped fresh vegetables—onion, celery, carrot, etc.—when the vegetables are well softened, the meat is added for the first cooking. The minced meats are then cooked very slowly with the addition of wine, tomatoes from our garden, and other ingredients.
