THE HARVEST: Hand-picked in plastic crates with careful selection of the bunches, transport by truck with isothermal cell
IN THE CELLAR: Sorting table, destemming, soft pressing of the grapes, maceration in a 70 Hl stainless steel vat, skin contact - must for 2 to 3 weeks, temperature control of the marc cap, 2 délestage per day. Pressing of the marc with a vertical hydraulic press. After approximately 9 months of maturation in wood, the wine, without the aid of clarifying agents and without tartaric precipitations, is bottled and after approximately 6 months of refinement it is released for consumption.
