Climate
The 2025 climate was generally favorable: a mild winter
free of extreme events allowed for a good vegetative rest, while
spring was regular, with average temperatures and sufficient rainfall
to ensure good vegetative recovery and uniform bud break.
The summer was hot but not excessively hot, thanks also to the ventilation
and the altitude of the hilly areas, which limited water stress and favored a
balanced ripening of the grapes. Rainfall, although not abundant, was
concentrated in the first half of August, ensuring excellent vine vigor and a
slow, regular ripening. These climatic conditions also favored the
development of complex aromas and maintained a good balance between sugars and acidity.
The harvest began in the last week of August with Grechetto, Viognier, and
Pinot Bianco, varieties that displayed excellent aromatic freshness.
The Procanico was harvested around mid-September, with perfectly
healthy grapes characterized by a balanced and
harmonious organoleptic profile.
Vinification and Aging
Upon arrival at the winery, the grapes were vinified separately by variety to
enhance their varietal characteristics. Part of the must underwent cold
maceration, remaining in contact with its skins for approximately 6 hours at a
temperature of 10°C, before being combined with the must obtained from the gentle direct pressing of the
grapes. The resulting must was transferred to stainless steel tanks where
alcoholic fermentation took place at a controlled temperature of 16°C. The wine
remained on its lees for several months to enhance its elegance and minerality
until blending and subsequent bottling.

San Giovanni della Sala comes from the vineyards of the ancient Castello della Sala, blending native Grechetto and
Procanico grapes with Pinot Bianco and Viognier to express Orvieto Classico in a new style. The first
vintage of Castello della Sala Orvieto Classico was 1990.
Tasting notes
San Giovanni della Sala 2025 has a bright straw yellow color, with delicate greenish
reflections that hint at the wine's freshness and liveliness.
On the nose, it offers a fine and elegant aromatic profile: notes of white flowers intertwine with fruity hints of white
peach, accompanied by citrus nuances of lime and yellow grapefruit that enhance its fragrance.
On the palate, it is enveloping and well-balanced, with a structure that balances freshness and softness. The lively
acidity, along with hints of citrus, makes the wine balanced and pleasantly persistent.
