winemaking and refinement
The grapes harvested manually during the second half of September are subjected to
soft pressing. Fermentation takes place in
stainless steel vats at a temperature of 18° - 22°
C. The wine is kept in contact with the yeasts for six months and then bottled.

colour: bright straw yellow.
perfume: intense hints of white flowers with
fresh notes of rennet apple, citrus fruits and
herbs.
flavour: consistent and fresh, with characteristics of
citrus fruits and mineral and almond notes.

The pleasant freshness and citrus notes

for prawns and shellfish from the Maremma coast or red mullet and sea bream cooked in a potato crust or with salt.
