GRAPPA FROM NOBILE DI MONTEPULCIANO POMACES 2022 LIFE THROUGH A GLASS
DISTILLATION Distilled from the fermented pomace of Sangiovese used for Vino Nobile di Montepulciano. The pomace is transported immediately to the Nannoni distillery in Paganico, Tuscany after racking, while still moist and full of the typical aromas of Sangiovese. Distillation takes place shortly after the pomace arrives at the distillery and is overseen by master distiller Priscilla Occhipinti, who uses a discontinuous distillation cycle with a handcrafted steam distillation machine. The head and tail are removed manually after each distillation cycle. At the end of the distillation process, distilled water is added to the young grappa, rich in aromas, to achieve the desired alcohol content.
