Harvest and vinification: Meticulous attention is paid to selecting the right harvest day, taking into account various parameters that determine the best quality of the wine. The same attention is paid to harvesting the grapes, ensuring they are brought to the cellar as quickly as possible, perfectly intact. Their immediate and gentle pressing yields a free-run must that, brought to an appropriate clarity by simple racking, will ferment at a controlled temperature (16–18°C). The wine will undergo a series of rackings and only be bottled in the spring for its secondary fermentation.
Maturation and aging: The Satèn wine rests in the cellar for at least 24 months before disgorgement and is released for sale only after a further month of aging in the stacks.
Sensory profile: Silky, delicate yet well-defined foam. Rather soft and elegant, vegetal-herbaceous aroma, yeasty with hints of pome fruit, citrus, and floral notes. Light fruit, apple with a slight tart note. Fine and persistent bubbles, barely perceptible dosage, long-lasting, slightly salty, with an ethereal and spicy touch in the background.
