The Champagne Extra Brut Blanc de Blancs "Les Pierrieres" produced by Ulysse Collin is more than a benchmark in the Côte des Blancs region. The winemaker himself immediately decided to select the finest grapes to produce only great wines.
The soils from which this Champagne originates are rich in the characteristic chalk, known as craie, a very calcareous soil that retains large quantities of water and releases it gradually, nourishing the vines evenly. The soil itself plays an important role in temperature control, retaining the sun's heat during the day and releasing it at night. This is why these soils best express the characteristics of the Chardonnay grapes planted there. The Champagne Extra Brut Blanc de Blancs "Les Pierrieres" is made from vines approximately 40 years old. Alcoholic fermentation is activated by indigenous yeasts and takes place in French oak barrels for at least six months, followed by a second fermentation in the bottle according to the méthode champenoise. The wine undergoes no treatment of any kind, such as filtration or clarification, but awaits cold aging with the arrival of the naturally low temperatures of winter. Once bottled, the Champagne Extra Brut Blanc de Blancs "Les Pierrieres" ages for up to 24 months on the lees in the cellar before being released with a low residual sugar content, bringing out the expressive aromas of the terroir to the fullest.
The Champagne "Les Pierrieres" presents a very intense straw yellow color, illuminated by elegant golden highlights. On the nose, it expresses remarkable fragrant sensations nuanced with notes of butter and freshly baked bread crust. On the palate, it is clean, with a remarkable minerality and great freshness, a citrusy finish, and a full-bodied, intense, and unique character.
