PRODUCT INFORMATION

o Champagne Dom Pérignon is perhaps the most famous Champagne produced and consumed by enthusiasts over time. The name Dom Pérignon is undoubtedly linked to a recent history and to the happy intuition of Robert-Jean de Vogüé who in 1936 decided to make Moët & Chandon reserve wines using old vintages. All the Champagnes Dom Perignon are vintage, i.e. made from grapes from the same vintage. Part of the current history of Champagne Dom Perignon depends on the culture of sparkling wine developed in the seventeenth century by Pierre Pérignon, the cellérier of the abbey of Saint-Pierre d'Hautvillers who first understood the importance of caring for the vineyards and who was in charge of controlling production by obtaining low yields and experimenting with the first assemblies. Only after 1829 were the remains of the Abbey taken into custody by the partners Pierre-Gabriel Chandon and Jean-Rémy Moët who decided to preserve what was left of that prestigious place and restart the winemaking business. It was necessary to wait until 1936 and the figure of Robert-Jean de Vogüé, president of Moët, before bottling the cuvée de prestige dated 1921 to form the first official Dom Pérignon. With the presence of Richard Geoffroy, the production philosophy of the Maison will further change, once again focused on the constant surpassing of the highest levels of exclusivity, rarity and excellence. Various factors contribute to making this uniqueness, including the use of the best Grand Cru grapes, the inclusion of a minimum percentage of Pinot Noir, the use of Chardonnay and the exclusion of Pinot Meunier. The dominant idea in Dom Pérignon consists in the constant search for momentum due to lack of stability, that is, in the search for surmountable and non-definitive flavors that can always translate resourcefulness and impetus. No less important is the fact that the Dom Pérignon put on the market must guarantee a potential aging of at least 30 years. Like all Champagnes, also Dom Pérignon, present in the Vintage, Plénitude Deuxième and Rosé versions, is the result of an assembly of two base wines made from Chardonnay and Pinot Noir grapes which, put to ferment a second time in the bottle, reach the level of froth before meeting the dosage phase. Important factors for the high quality of Dom Pérignon are factors such as the long stay in contact with the yeasts, the very high quality of the grapes, perfect acidity and aromatic complexity such as to guarantee long-lived wines of extreme finesse.
