PRODUCT INFORMATION

The wine displays a brilliant golden hue, enhanced by green and silvery highlights. The effervescence is notable for its remarkable finesse, with an elegant and persistent perlage.
The bouquet reveals a delicate and precise aromatic palette, dominated by white flowers, particularly lime and honeysuckle. Notes of chamomile, pineapple, and beeswax complete the bouquet, while a persistent chalky minerality permeates the aromatic expression.
The palate opens generously and vibrantly, offering a fascinating balance between saline freshness and luminosity. The texture is rich and fleshy, reflecting a warm vintage with very ripe grapes, without ever losing energy. The acidity, though present, elegantly structures the wine and accompanies it throughout the palate. The finish, dry and intense, lingers long with a chalky minerality that gradually intensifies.
Pairings
Salon 2015 pairs beautifully with oysters, whose salinity is elegantly balanced by the champagne's vibrant acidity and minerality. It also pairs beautifully with scampi, lobster, crab, and shrimp. For more elaborate dishes, this champagne enhances a salmon terrine with jellied oysters, pig's trotters, or traditionally prepared sweetbreads. Caviar is also an exceptional pairing: its nuanced flavors harmonize perfectly with the wine's minerality and delicate aromas. Delicate fish such as turbot or halibut, simply prepared, allow the champagne to fully express its character.

Salon 2015 can be enjoyed now, but boasts exceptional aging potential until approximately 2050, or even beyond. This extraordinary longevity reflects the wine's concentrated structure and the House's uncompromising production standards.
An extraordinary blanc de blancs champagne from the terroir of Le Mesnil-sur-Oger
The House
Officially founded in 1920 by Eugène-Aimé Salon, Maison Salon embodies a unique philosophy in Champagne: one grape variety, one terroir, one vintage, one wine. A pioneer of the blanc de blancs style as early as 1905, Eugène-Aimé Salon set unwavering standards of excellence, producing only in exceptional years. Since 1989, Salon has been a subsidiary of the Champagne Laurent-Perrier group, led by Didier Depond since 1997, with Michel Fauconnet as cellar master.
The Vineyard
The 2015 vintage is the 45th produced in over 120 years of history, a testament to the House's extreme selectivity, which averages only three or four vintages per decade. Salon 2015 comes exclusively from the grand cru village of Le Mesnil-sur-Oger, located approximately 19 kilometers south of Épernay in Champagne's Côte des Blancs. The terroir is defined by exceptional, deep chalky soils, which impart a distinctive minerality and create ideal conditions for the grapes to develop a remarkable balance between sugar and acidity. The vineyard includes the Jardin de Salon, an exclusive one-hectare parcel replanted in 2002, as well as twenty distinct parcels selected at the beginning of the 20th century. The vines average about 25 years old, with some reaching 40 years or more, directly contributing to the Champagne's deep and multifaceted character.

The Vintage
2015 proved to be an exceptional vintage, with contrasting weather conditions. After a rainy autumn in 2014 and an unusually mild winter in 2014-2015, spring 2015 saw rains that delayed the initial development of the vines. Bud break for the Chardonnay grapes occurred around April 14, 2015. From mid-May to mid-August, an exceptional combination of drought, record sunshine, and high temperatures marked the growing season, making it one of the hottest and driest periods of the century. Flowering of the Chardonnay grapes occurred on June 11, 2015, and veraison began in early August. Rainfall beginning in mid-August brought relief from drought and cooler temperatures, allowing the vines to complete their ripening cycle in a balanced manner. Harvesting at Le Mesnil-sur-Oger began on September 8, 2015, under clear skies, significantly earlier than historically usual, reflecting the impact of climate change.
Vinification and Aging
Salon 2015 was vinified using a hands-off approach that respects the terroir. All fermentation and aging take place in stainless steel tanks, eliminating any influence of the wood on the aromatic profile and allowing for the purest expression of the terroir. The Champagne does not undergo malolactic fermentation, resulting in brighter acidity, pronounced minerality, and a distinctive liveliness. The wine was bottle-aged on the lees for approximately nine years before disgorgement in February 2025. The yeasts release compounds that contribute texture, richness, and complexity.
