Each individual cavalluccio is hand-formed by our pastry chefs, which is why it is impossible to find two identical ones. But we like to make them like this: with a completely artisanal process.
Description Known at the time of Lorenzo the Magnificent with the name of Biriquocoli, cavallucci are one of the most traditional desserts of Siena. Obtained from the artisanal processing of excellent quality raw materials including flour, candied fruit, sugar, walnuts, honey, coriander and anise seeds. We make sure that our ingredients are always fresh and come from the best farms. Each individual cavalluccio is skilfully kneaded and worked by hand by our pastry chefs. When it has obtained the desired shape, the cavallucci is ready to be baked. Once cooled, the cavallucci can be packaged in sealed food-grade bags. The consistency of the cavallucci is crunchy on the outside and soft on the inside. The dessert has a strong aftertaste of anise and candied fruit on the palate.
