HOW TO SERVE Serve at 16-18°C VINIFICATION A wine produced from vineyards located at 200, 300 and 450 meters above sea level, with a different exposure. The production area is in Castelnuovo dell'Abate, in the valley of the Orcia river. The grapes are harvested by hand and placed in containers of 15-20 kg. The yield is 30-35 quintals per hectare. After maturation, they are immediately subjected to a rigorous selection process. The vinification takes place after spontaneous fermentation in wooden barrels. The wine remains in 30 hl oak barrels for 40 months and another 12 months in the bottle before being sold.
