The desire to express the estate's exceptional qualities has been at the heart of Ornellaia's philosophy since the very beginning. Ornellaia is a cuvée of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, a faithful expression of a unique terroir that has always been in harmony with nature.
VINIFICATION AND AGEING The grapes were hand-harvested into 15-kg crates, and the bunches were selected on a double sorting table, before and after destemming, and finally soft-pressed. Each variety and each vineyard parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures between 26-30°C for a week, followed by maceration for a total of approximately 10-15 days. Malolactic fermentation took place primarily in oak barriques (70% new and 30% used). The wine remained in barriques in Ornellaia's temperature-controlled cellar for approximately 18 months. After the first 12 months, it was assembled and then returned to the barriques for an additional 6 months. The wine then aged in bottle for another 12 months before being released for sale.
