Technical Characteristics Vinification Fermentation in stainless steel, 15/20 on the skins; after racking, the wine rests in stainless steel before completing the process in barriques. Pairings Game and stewed meat starters, but also with aged cheeses. Vine Variety Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot Aging 8 months in French oak barriques. The Vineyards The winery currently has 9 hectares of vineyards, divided as follows: 4.5 hectares of red grape varieties for the production of our Tuscan red wine in the Bolgheri DOC area, more precisely along the Aurelia state road; 4.5 hectares of white and red IGT Toscana grape varieties located in the surrounding areas. The Winery The winery is currently located in Donoratico and covers 700 square meters of covered space plus a courtyard in front. The vinification, storage, and bottling of our Bolgheri DOC wines and more take place here. The stainless steel vinification vats are of various sizes, ensuring the separation of grapes with different characteristics, allowing them to be vinified with the right specific techniques. The total capacity of the steel tanks is approximately 1,700 hl, while the barriques currently house 90 225-liter barrels of various vintages and cooperages, all made of French oak. The grapes are received strictly in crates, which are tipped directly into a destemmer with a reel and rubber rollers for a gentler handling of the grapes. Furthermore, a new winery is in an advanced stage of construction, located amidst the 4.5 hectares of Bolgheri DOC vineyards, which will optimize the harvesting and processing of the grapes.
