It comes from the same vines, under the same sky, from the same philosophy. In the glass it shows off a brilliant ruby red color, with the usual purple reflections. The nose is fresh, with hints of pepper rose and cypress berries, which recall the Mediterranean scrub. When tasted, the wine is elegant, with a nice acidity and a persistent and savory finish that invites you to take a second sip.” Olga Fusari - Winemaker - April 2023 THE CLIMATE OF 2021 The 2021 vintage began with a rainy and mild winter which allowed the soil's water reserves to be replenished. After a dry March, budding occurred in the first two weeks of April. The gradual increase of the temperatures, with normal rainfall, allowed regular growth of the shoots, to reach a flowering in excellent conditions at the end of May. Since the month of June, fully summery weather has emerged with temperatures slightly higher than average and an almost absence of precipitation, leading to veraison to the last week of July. The drought continued throughout August and September, but the rains spring and the deep soils of the Bolgheri area have allowed the vines to avoid too intense water stress, creating the conditions for small and very concentrated grapes with high quality potential. September was warm and sunny and free of rain, allowing us an “à la carte” harvest to express al maximize the qualitative potential of each individual vineyard. The harvest of the reds essentially took place during the month of September, with Merlot in the first two weeks and the other vines of the estate from 13 September, ending on 1 October. VINIFICATION AND AGING The harvest took place by hand in 15 kg boxes and the bunches were selected on a double sorting table before and after destemming and subjected to a soft pressing at the end. Since 2016, in addition to manual selection the optical one was introduced to further increase the quality of the selection. Every variety and every parcel it was vinified separately. The alcoholic fermentation took place partly in stainless steel vats, partly in cement vats, at temperatures between 22-28°C for two weeks followed by maceration for approximately 10-15 days. The malolactic fermentation took place in steel vats, subsequently the wines were transferred into barriques (25% new and 75% second passage). The wine remained in barriques in the Ornellaia cellar controlled temperature for a period of approximately 15 months. After the first 12 months, assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle six months before of the introduction on the market.
