Ca’ Florian Amarone Riserva is born from the selection of the best grapes from the Cru Ca’ Florian, one of the most prestigious vineyards of the Tommasi family. Intense ruby ??red with garnet reflections, it offers an elegant and very complex bouquet on the nose, with notes of very ripe red fruit, cherry, blackberry and plum and spicy nuances of liquorice and bitter cocoa. On the palate it is full-bodied and austere, with enveloping tannins and a finish of splendid freshness and excellent persistence. Pairings A great meditation wine, at the table it accompanies with its elegant and full-bodied structure important dishes of game, red meats and selections of mature cheeses. Origin From the Pergola Veronese vineyards of the prestigious Cru Ca’ Florian, in the hilly area of ??Pedemonte in the Valpolicella Classica. Grapes Corvina 75%, Corvinone 20%, Rondinella 5% Vinification and Aging Harvest and manual selection in 5/6 kg crates. After a second selection, the grapes are left to dry in an aired drying room for 100 days on traditional racks, called “Arele.” In January, the pressing takes place and the fermentation takes place slowly for 30 days in oak vats, using only indigenous yeasts. The refinement lasts 4 years and takes place for the first year in barriques and for the following 3 years in 35 hl Slavonian oak barrels. The Amarone Ca’ Florian then rests in the bottle for at least a year.
