A pure Sauvignon Blanc whose first vintage dates back to 1956, comes to life from the most suitable vineyards of Alto Adige, from a manual harvest with a rigorous and thoughtful selection of the grapes. After arriving in the cellar, the grapes are delicately pressed with whole bunches and racked by natural sedimentation. A slow fermentation at a controlled temperature is then carried out in stainless steel tanks, to then refine for 5-7 months on fine yeasts, partly in stainless steel barrels (80%) and for the remainder in large wooden barrels. The assembly is carried out one month before bottling.
A beautiful straw yellow color in the glass, with reflections that tend towards greenish, it opens to the nose with a colorful bouquet in which the fruity hints of ripe apricot, mandarin and passion fruit stand out, which blend harmoniously with notes of elderflower, nettle and mint. On the palate, the pleasantly fruity taste is confirmed, enhanced by a marked freshness. A wine that stands out for its good structure and bouquet, so complex.
A wine that finds its best match with boiled white asparagus on Bolzano sauce, to accompany it with a native dish, such as nettle dumplings, also from Alto Adige. Also try with a tuna carpaccio, smoked salmon and raw scampi.
