Finding its perfect home in the elevated vineyards of Torre Bisenzio, this sparkling expression of Pinot Noir is elegant and fresh, hallmarks of our estate. Only 750 bottles produced.

Hand-harvested. Destemming, pressing, temperature-controlled fermentation in stainless steel. Secondary fermentation in the bottle with approximately 24 months on the lees. Disgorgement May 2021. Zero dosage.
Aroma and Flavor
The wine expresses the distinctive characteristics of our terroir – minerality, savory flavors, and a bready crust resulting from time on the lees.
Certified organic vineyard with east-facing exposure at 550–580 meters above sea level. Ocean floor soil, consisting of sedimentary clay, gravelly sands, and alluvial silt with marine fossils (shells and oysters). Density approx. 4400 vines/ha. Yield 35hl/ha. Guyot training system.
