The Valpolicella Ripasso "Una volta sola" is produced using the historic method, summed up in the dialect expression "'na olta sola a la vecia maniera." It is obtained by repassing a light Valpolicella over the Amarone pomace in a 1:1 ratio. The result is a wine that truly is halfway between a Valpolicella and an Amarone: it has the cherry flavor and drinkability of the former, yet at the same time offers complex notes of chocolate, spice, and sweet tannins reminiscent of Amarone. A vibrant, fresh, and straightforward wine.

The illustrations on the Peaks & Valleys wine labels depict the vineyards and areas of the various locations involved in the project. The grapes for this wine come from the vineyards surrounding Villa Pellegrini, in Romagnano, Valpantena, a cooler valley than the others, characterized by strong temperature variations and the influence of the Lessini Mountains. The label depicts the Villa and the fountain with the dolphin in its gardens.
